BBQ La lonica Chicken Skewers

INGREDIENTS
500g La lonica chicken thigh fillets, cut into strips
60ml tomato sauce
30ml soy sauce
1 clove garlic, crushed
1 large red capsicum,cut into 4cm pieces
2 large red onions, cut into wedges
Olive oil spray

METHOD
Pre-soak 12 long wooden skewers in water for 15 minutes.

Combine tomato sauce, soy sauce and garlic in a bowl.

Add chicken and coat with the marinade, cover and refrigerate for 1 hour.

Thread capsicum, chicken and red onion on prepared wooden skewers. Spray lightly with olive oil.

Preheat a BBQ flat plate to medium heat. Cook skewers, turning occasionally for 10 minutes or until chicken is cooked and golden.

David’s Tips
Thighs are the tastiest part of the chicken. Their darker, firmer meat is perfect for slow-cooked dishes and on the BBQ or char-grill.
